The manufacturing procedure for sodium ascorbate involves dissolving ascorbic acid in solution with sodium bicarbonate (prepared from sea water). This process removes the bicarbonate from the sodium replacing it with ascorbic acid forming sodium ascorbate. This process produces a truly buffered vitamin C.
The Ascorbic Acid/Sodium Ascorbate is another pure vitamin C that is readily disguised in prepared foods, it's also been a favorite among health professionals who prescribe mega doses of vitamin C to treat illness. It combines moderate acidity to enhance digestion with fully-reacted, tissue compatible sodium ascorbate to create a form of vitamin C.
